ITALIAN LEMON & RASPBERRY EASTER CAKE

This Italian lemon and raspberry cake is the perfect sweet treat to satisfy your sweet tooth without the added sugar! This recipe has been altered to reduce fat and sugar content. The perfect cake to serve at Easter with a cup of tea!

Contains; wheat (flour), egg, milk (yogurt)

Preparation time: 10 minutes

Cooking time: 30 minutes

 

INGREDIENTS

1 ½ cups (180 g) flour, self-raising

3 eggs, average size

1 small banana

1 lemon (zest only)

1 tsp vanilla extract

1 cup (250 g) Greek yoghurt

½ cup water

To decorate:

4/5 cup (200 g) cream cheese (low-fat)

¾ cup (125 g) raspberries

 

METHOD

  1. Preheat the oven to 180 oC/160 oC Fan/350 oF/Gas Mark 4.
  2. Sieve the flour into a large mixing bowl.
  3. Add the eggs, banana, milk, lemon zest, vanilla extract, and yoghurt in a separate bowl.
  4. Whisk together until smooth.
  5. Pour the wet mixture into the dry mixture and fold the mixture until smooth. Add the water.
  6. Pour into a lined cake tin and bake for 55 minutes.
  7. Mix the cream cheese and raspberries for the icing and cool in the fridge in a separate bowl.
  8. To determine when the cake is baked thoroughly, insert a cocktail stick.
  9. Allow the cake to cool before serving.

  5. Gluten-free flour could be used for allergen purposes.
