Apple and Peanut Butter Stacks

A crunchy and nutty snack that is easy to prepare and delicious to eat.  Apple slices make a fantastic base for a variety of toppings.  Peanut butter can be topped with seeds for extra crunch and nutrients or replaced with cream cheese and topped with dried fruit and nuts.  It’s an ideal snack for working adults, sporty people, and children, who need something quick.

Serves:  3

Dietary: suitable for vegan, vegetarian, milk-free, egg-free and coeliac diets.

Preparation time: 10 minutes

 

INGREDIENTS
1 medium apple, sliced (circles, 0.75cm thick)
3 tsp smooth peanut butter
1 tsp lemon juice (optional)

 

METHOD

  1. Remove any of the core remaining in the apple slice by cutting a small circle from the centre.
  2. Dab the slices dry with a paper towel.
  3. Pair similar-sized slices together and spread a ½ tsp of peanut butter on the top of each slice. The amount of peanut butter per sandwich will depend on the number of apple slices.
  4. Press each pair together, with the peanut butter facing inwards, to form a sandwich.
  5. If the stacks are being prepared for later, use a sheet of kitchen towel to wipe the exposed apple surface with some lemon juice to avoid browning.
  6. Store in an air-tight container.

VARIATIONS

  1. To make this recipe peanut-free, the peanut butter could be swapped for almond butter.
  2. To make this recipe nut-free, the peanut butter could be swapped for a low-fat cream cheese or yoghurt.
  3. For extra yumminess, try adding some dried fruit on top of the nut-butter or cream cheese in between the apple slices.
