
This traditional Lassi drink is ideal for an afternoon tea or snack. It is a chilled, creamy and delicious yoghurt beverage made with bananas, cashew nuts and honey. While bananas add creaminess and
sweetness, chia and flax seeds add further fullness. Soya yoghurt has been used to make this lower in saturated fat and more inclusive. Easy and quick to make; perfect when in a hurry.

INGREDIENTS
2 cups of vegan yoghurt (soya), unsweetened, fortified
½ cup (125 ml) soya milk, unsweetened, fortified
10 (20 g) cashew nuts
1 medium (160 g) banana
½ tsp flaxseed
½ tsp chia seeds
1 tsp honey
10 pistachios, coarsely ground
METHOD
1. In a blender, add the yoghurt, banana, cashew nuts, honey, flaxseeds, and chia seeds.
2. Blend the ingredients on high speed till smooth and creamy.
3. Place in the fridge to chill.
4. Transfer to a glass and garnish with the ground pistachios.
