Belgium is often thought of for their amazing chocolate; this pudding is a healthier twist on a traditional Belgian treat. It is the perfect dessert for those who require additional calcium, such as the elderly and children. It is also a good source of iron.

INGREDIENTS
4 Tbsp (60 ml) skimmed milk
17 squares (60 g) dark chocolate (85% + Cocoa)
4 Tbsp (60 g) ricotta cheese (7% fat)
16 (65 g) raspberries
METHOD
- Melt the dark chocolate in the microwave.
- Mix in the milk slowly, stirring constantly, until it forms a creamy mixture.
- Fold in the ricotta cheese.
- Using a handheld blender and blend for 1 minute.
- Chill for at least 30 mins.
- Serve with fresh fruit, such as raspberries.
