BELGIAN CHOCOLATE PUDDING

Belgium is often thought of for their amazing chocolate; this pudding is a healthier twist on a traditional Belgian treat. It is the perfect dessert for those who require additional calcium, such as the elderly and children.  It is also a good source of iron.

Serves:  4 (mini desserts)

Dietary: egg-free, vegetarian, nut-free, soya, gluten-free, sesame-free,

Contains: Milk (skimmed milk, ricotta cheese)

Preparation time: 15 minutes

INGREDIENTS

4 Tbsp (60 ml) skimmed milk
17 squares (60 g) dark chocolate (85% + Cocoa)
4 Tbsp (60 g) ricotta cheese (7% fat)
16 (65 g) raspberries

 

METHOD

  1. Melt the dark chocolate in the microwave.
  2. Mix in the milk slowly, stirring constantly, until it forms a creamy mixture.
  3. Fold in the ricotta cheese.
  4. Using a handheld blender and blend for 1 minute.
  5. Chill for at least 30 mins.
  6. Serve with fresh fruit, such as raspberries.
