Fruit Chocolate Peanut Butter Skewers

A quick, easy to make, delicious fruity snack with a tasty sauce.

Serves:  2

Dietary: Suitable for vegan, vegetarian, gluten-free, and milk-free diets.

Preparation time: 10 minutes

Cooking time: 5 minutes

 

INGREDIENTS

3 strawberries, halved

1 banana, peeled, sliced into 2.5cm chunks

1 kiwi fruit, peeled, halved and cut into 2.5cm chunks

1 Tbsp smooth peanut butter

30 g dark vegan chocolate, chips or chunks

 

 

METHOD

  1. Add your fruit onto skewers, alternating between the different fruits.
  2. Add your chocolate chips to a small microwave-proof bowl and heat them in the microwave for 5 – 10 second bursts until melted.
  3. Stir between each burst to ensure the chocolate does not burn.
  4. Stir your peanut butter into the melted chocolate and drizzle over the fruit skewers.
  5. Leave the sauce to harden slightly before eating.

VARIATIONS

  • You can choose other fruits if you prefer; apple, melon and grapes are also excellent choices for the skewers.
  • Swap peanut butter with another nut butter, e.g. roasted almonds with pumpkin spice or hazelnuts.
  • Alternatively, make your own nut butter with a high powdered blender or food processor, roasted nuts and a little vegetable oil.
