Zesty cucumber-mint yoghurt, a Middle Eastern dip. It is so simple, very easy to prepare, and kids love it! The added dairy is a perfect snacking dip, as it adds calcium, which is very important for children’s growth.

INGREDIENTS
2 Tbsp (80 g) Greek yoghurt, full fat
1/8 (75 g) cucumber, finely diced (approx. ¼ English cucumber)
½ tsp fresh mint, finely chopped
Zest of ¼ lemon
1 tsp lemon juice, to taste
Seasoning, optional
10 corn tortilla chips, low salt * (e.g. ASDA, Simply, Tostitos)
* Always check the packet for the list of allergens
METHOD
- Mix all the ingredients until combined.
- Keep refrigerated until ready to serve.
- Serve a spoon of dip on a plain tortilla chip

VARIATIONS
- Dried herbs can replace fresh mint.
